My absolute favorite breakfast. It’s quick. It’s easy. What’s more to love?? Here’s the thing. We just don’t get enough veggies throughout the day. I’m always trying to find ways to incorporate veggies in every meal, including breakfast. Sure, throw some spinach leaves in your smoothies. That’s great! Add a little chopped peppers and onions to an omelet. Even better. But sometimes, I want carbs!! Yes! Carbs for breakfast… who would have thought??
